Cheesy Red Pepper Muffins...
 
1.5 cups self-raising flour
2 cups grated tasty cheese
1/2 tsp salt
1 Tbsp sugar
pinch cayenne pepper
1-2 tbsp chopped fresh corriander
1 large red pepper - roasted and chopped
1 egg
1 cup of milk

Here are the 5 Steps!!!

1. Mix together the flour, cheese, salt, sugar and cayenne pepper.

2. Add
coriander leaf and chopped roasted pepper
.
 
 

3. Mix
lightly
with your fingers to combine
.

4. In
another container,
beat the egg and milk together, t
hen pour onto the dry ingredients. Fold together, taking care not to over mix.

5. Bake at 200 degrees Celsius until muffins are golden brown.
Remove from oven, stand for 2 minutes before twisting to remove from pan.
 
These are the quickest easiest muffins in the worldAll done and in the oven in 5 minutes.

To
be fast and easy... I buy the cheese already grated, and the red peppers are always in stock in the cupboard - in a jar!  The thing that puts people off the most with using the peppers is having to roast and skin! - don't do that! Just take them out of the jar ...

These are
absolutely fantasticthe cayenne
pepper gives the muffins a delicious spark -
just not too little and not too much!

There's not anymore to say... except this is my secret recipe - so don't tell anyone!!!
