Cheesy Red Pepper Muffins...
1.5 cups self-raising flour
2 cups grated tasty cheese
1/2 tsp salt 1 Tbsp sugar
pinch cayenne pepper
1-2 tbsp chopped fresh corriander
1 large red pepper - roasted and chopped
1 egg
1 cup of milk
Here are the 5 Steps!!!
1. Mix together the flour, cheese, salt, sugar and cayenne pepper.
2. Add coriander leaf and chopped roasted pepper.
3. Mix lightly with your fingers to combine.
4. In another container, beat the egg and milk together, then pour onto the dry ingredients. Fold together, taking care not to over mix.
5. Bake at 200 degrees Celsius until muffins are golden brown.
Remove from oven, stand for 2 minutes before twisting to remove from pan.
These are the quickest easiest muffins in the world. All done and in the oven in 5 minutes.
To be fast and easy... I buy the cheese already grated, and the red peppers are always in stock in the cupboard - in a jar! The thing that puts people off the most with using the peppers is having to roast and skin! - don't do that! Just take them out of the jar ...
These are absolutely fantastic, the cayenne pepper gives the muffins a delicious spark - just not too little and not too much!
