Carson smokes fish with Chardonnay infused oak chips
Carson, our vineyard manager, is a keen fisherman and is forever coming to work with the fruits of his labour, which makes Friday lunch time a delicious occasion.
It is a tradition here at Hatton Estate that we all sit down together at the end of the week and enjoy a glass of our fine wine with our lunch. (BSR is a killer match with salami sandwiches).
With summer fast approaching we thought we would get into the lazy afternoon frame of mind and try our hand at fish smoking. Being a winery smoking our fish is just plain old manuka was not an option.
We smoked ours in Chardonnay infused oak chips (as you do).

Matches made in heaven
Copita in Featherston Street, Wellington, have done an amazing job matching our chardonnay EC2 with Scallops on a flaky pastry leek tart with basil syrup for a private function this weekend. We only wish we were invited too. They have just revamped the interior as well, so pay them a vist and watch out for their new menu coming soon. Cant make it to Wellington? Find us elsewhere here. Hatton Estate EC2 Chardonnay is now being served by the glass at Alain Ducasse Essex House New York 155 W 58th street (between 6th and 7th) In New York, of course!
